Eating My Stress – Party Appetizers!
It has been a very gloomy spring in Minnesota (if you can even call it spring). I’m also still very freaked out and stressed about our decision to move to Hawaii. Gray weather? Stress? Procrastination? You know what that means! More comfort food!
The hubs and I first made these warm little bites as a snack for our annual Christmas brunch. They were such a hit that we have been serving them at dinners, cocktail parties and pot lucks ever since (and recently, eating entire batches in front of the TV with drinks and calling it “hors d’oeuvres hour” to make ourselves feel better about it). Whatever the occasion, they are EASY (seriously, they are made of 3 pre-packaged ingredients) and so, so addicting. We always have the ingredients on hand.
Sweet and Spicy Cream Cheese Puffs
Preheat oven to 350 degrees. Grease and flour a mini muffin tin.
Thawed puff pastry dough (PROMISE me that you will use a brand without hydrogenated oils – so bad for you)
Cream cheese (use 1/3 fat or neufchatel if you’re counting calories – actually, you should probably just stay away if you’re counting calories)
Hot Pepper Raspberry Spread or topping of choice (Hot Pepper Peach?)
Roll puff pastry until it is 1/8 – 1/4 inches thick. Cut dough into 3×3 inch squares and place into prepared mini muffin tin*. Place a dolap of cream cheese in each dough cup. Top with a spoonfull of preserves. Bake until the pastry is golden brown, about 15 minutes (oven times will vary). Serve warm, and remember, sharing is caring so try not to eat them all yourself.
*If you don’t own a mini muffin tin, try pinwheel roll-ups
